Yarra Valley Cabernet
Wine
Mayer Yarra Valley Cabernet is produced in tiny amounts from vines along St Huberts Road in Yering, a site marginally warmer than other Yarra Valley sites.
The wine is 100 per cent whole bunch fermented, a daring and unusual approach for Cabernet given its reputation for tannins. Wild yeast fermentation is followed by maturation on lees for around one year.
The wine is handled only once: when it is blended to tank before bottling. It receives no fining or filtration.
Deep dark red, Mayer Yarra Valley Cabernet is stalky, spicy and medium bodied with juicy berry flavours. Cellaring potential is six years.
